It was nothing too complicated, but simple things can be very delicious as well.
Started off with marinating the chicken in a marinade made of olive oil, lemon juice, chili, garlic, honey, salt and soy sauce. Marinated it for about an hour.
Sliced some aubergine and long bell peppers. Heat up two pans, panfry the chicken and in the other pan the aubergine and peppers (season those to taste). Both on high heat (if you have a grillpan use that, sadly I don’t have one).
Take a ciabatta (or half), slice open, bit of rucola o the bottom, then grilled aubergine, chicken, some blue cheese crumbled on the there and finish with peppers.
And it was delish.
